Dishan Vincent is an Australian chef who learned early that the best cooking starts long before the stove: in the garden, at the market, in conversation with the people who grow things.
The apprenticeship in that idea came at home: at Manzé in Melbourne, cooking island food built on generosity, and at The Agrarian Kitchen in Tasmania’s Derwent Valley, where the day’s menu was decided by what the garden handed over that morning.
Then Europe, for the best part of five years. Paris, rural France, the Basque Country, Copenhagen: kitchens obsessed with produce, preservation and place. He came home with a suitcase of ideas, a deep bench of winemaker friends, and a very strong opinion about tomatoes.

How he cooks
A thesis,in four courses
Start with the vegetable. Not as a side, not as a garnish, but as the reason the dish exists. A tomato at its peak needs less from a cook, and deserves more.
Follow the season wherever it leads: gluts, gaps and all. Preserve the excess in jars, ferments and syrups, so January still tastes of summer.
Cook with fire when fire makes it better, restraint when it doesn’t. Technique should disappear into the plate.
And keep travelling. Every kitchen, market and grandmother’s table adds a line to the cooking.
